We approach every job with care and forethought in terms of which ingredients are available to us locally, who we can buy them from and how we can cook them. Each menu is written with due respect to where in the world we are.
Conscious of Planet
We are very mindful of the impact that our work has in terms of waste, inputs, transport and energy. At every opportunity, we work hard to minimise each of these through careful menu writing, sourcing and cooking.
The footprint that we do leave is offset through our partnership with Make It Wild, through which we support broad leaf, native, deciduous rewilding projects in the UK and mangrove planting in Kenya. You can read more about Make It Wild here.
