We were super lucky to be in touch with The Scottish Bee Company earlier this month, receiving a jar of their beautiful heather honey- here’s a wee recipe to enjoy that makes a super lazy Sunday morning breakfast… The recipe serves 4 and takes around 15 minutes to make.
1 apple
2 eggs, separated
40g spelt flour
1 tbsp. heather honey
125g ricotta
40ml whole organic milk
salt
30g butter
1 tbsp. thyme leaves
Method
Begin by grating the apple and cooking in the butter until soft- around 5 minutes- allow to cool.
Whisk together the ricotta, egg yolks and flour until smooth. Add the salt and milk and set aside.
Whisk the egg whites until they reach soft peaks and gently fold through the ricotta mixture.
Fold through the honey (add more if you like it sweeter), the thyme leaves and the cooked apple.
Melt a little butter in a frying pan and cook small ladles of the mixture for 3 minutes on each side before serving with your choice of honey, butter, creme fraiche, yoghurt or fresh fruit.
